SAUSAGES ARE COMPLICATED!

Of course, pork sausages are not permitted by the Torah:

the swine--although it has true hoofs, with the hoofs cleft through, it does not chew the cud: it is unclean for you.

Lev. 11:7

But nowadays there are plenty of other options--turkey and chicken sausages abound. However, most sausages of any variety use pork casings. A few use lamb casings and you have to look very closely and ask a lot of questions to determine which is which. You also have to have a lot of faith in your butcher.

As with baked goods, and other processed foods, once you leave the safety of your own kitchen you either have to do a lot of homework, or lower your standards. How comfortable is this to you? How would you feel if you thought you were successfully avoiding pork and then discovered the casings surprise? What would you do about it?
